Cucumber Mint Noodles

---- If this post is not displaying properly, view it in your browser here: Cucumber Mint Noodles --- One of the great discoveries my summer so far has been that noodles can come from many places. I already knew about the pasta boxes that line my pantry, but apparently there is this whole world of carrot and squash and cucumber and probably millions of other fresh summer veggies that make dang good noodles. That discovery, along with a gift of some cucumbers and the mint that is taking over the world in my back yard led me to one of my current noodle crushes: cucumber mint noodles, which are dressed with an easy lemon ginger sauce to give them a little kick ....more

Warm Ham and Potato Salad

---- If this post is not displaying properly, view it in your browser here: Warm Ham and Potato Salad --- We are smack in the middle of fresh vegetable season...they have us surrounded, and I love it. I'm looking for any and all ways to fresh-vegetable-up every meal we have, and this is one of my new favorite ways of dealing with the piles and piles of fresh green beans. I buy them by the boatload at our local farm market, and while I am perfectly content to crunch on them just as they are, they are also the perfect mix-in with ham, baby potatoes and a light mustard dressing ....more

Pina Colada Fruit Salad

---- If this post is not displaying properly, view it in your browser here: Pina Colada Fruit Salad --- I would like to say that I came up with this deliciously dramatic dessert all on my own, but it's a variation on the one we look forward to every time we visit our favorite bed and breakfast at the Jersey Shore. It's a beautiful plateful of fresh fruit, aromatic mint with a scoop of sorbet on the top for good measure...all served up in a fresh pineapple shell. It's the perfect breakfast, lunch or even dinner treat, and while I love it best at that B&B (and more on them below), it's also something I make from time to time in my own kitchen, for both the good taste and the good memories ....more

Spicy Fried Noodles

---- If this post is not displaying properly, view it in your browser here: Spicy Fried Noodles --- Here's the ironic thing about this recipe for spicy fried noodles: I am the least spicy person I know. Mozzarella Prosciutto Salad

---- If this post is not displaying properly, view it in your browser here: Mozzarella Prosciutto Salad --- Recipes are born all sorts of ways in my house. Some of them come together because the Southern husband starts reminiscing about the banana pudding his mama used to make. Some are invented because I have heard one too many times about ramen burgers and I absolutely NEED to figure out my own version of them ....more

Tuna Pasta Salad

I'm tossing them into every single thing I can think of, including and most especially supper, and one of my favorites is this quick and easy tuna pasta salad, which has loads of one of my personal favorites, sweet and sunny cherry tomatoes. A handful of those babies, some fresh lemon, a little pasta and the best jarred or canned tuna you can get your mitts on, and you are all set for a light and lovely summer supper! ...more

Pork, Bacon and Bread Kabobs

---- If this post is not displaying properly, view it in your browser here: Pork, Bacon and Bread Kabobs --- Pork tenderloin and I have always had a bit of a love-hate relationship. I love to eat it, but usually when someone else is cooking it because I have a great talent for making it dry. As a result, the Southern husband looks longingly at it in the supermarket while I roll the cart right on by, heading for the good old dependable chicken ....more

Easy Shrimp Fried Rice

And one of the best things about making shrimp fried rice is that it is one of the easiest, most flexible suppers you can make ....more
