A New Twist on Pasta and Greens: Macaroni with Baby Kale, Lemon, and Parmesan

At my house it's the time of year where it's impossible to predict what the weather is going to be like by dinnertime. That's when dishes like this Macaroni with Greens, Lemon, and Parmesan come in handy. This is delicious at room temperature if Mother Nature is having a hot flash that day, or if the temperatures are a bit more chilly you can eat it hot. It's also loaded with delicious kale for nutrition (or use any type of greens that appeals to you.) I've been posting Meatless Monday recipes on Kalyn's Kitchen for quite awhile now, and this definitely stands out as one of my favorites.
