No Knead Bread

No Knead Rustic Bread – The goodness of homemade bread without the upper body workout of kneading.
I have really enjoyed baking as of late and have been experimenting with different types of bread. Searching around I found a recipe for a rustic bread that is perfectly crusty on the outside and chewy on the inside and perfectly knead free! I changed the recipe a bit to make it easier and here it is.
Ingredients:3 cups unbleached all-purpose flour – I also use half all-purpose and half all wheat flour for a slightly healthier version.
1 3/4 teaspoons salt
1/2 teaspoon yeast
1 1/2 cups water *You can change the flavor by adding in herbs, cheese, fruit, and/or nuts right into the batter to make some pretty amazing breads!*
Making the bread is super easy. Simply mix the flour, salt, and yeast together in a large bowl then add in the cup and a half of water. The dough will be sticky – that is ok! Don’t overmix trying to see if it will firm up.
Cover the bowl with plastic wrap and set aside overnight. The picture below is an italian loaf with fresh parsley and oregano.
The next day heat the oven to 450*F and place a cast iron pot with a lid in to warm – I use my coated dutch oven. While everything is warming up, pour the dough onto a floured surface and shape into a ball. Cover and let rest until dutch oven has preheated for 20 minutes.
Remove pot from oven and drop dough in. You do not need to grease the pot! Cover with lid and bake for 30 minutes. Remove lid and bake for another 15 minutes.
Remove the pot from the oven and carefully remove the loaf and transfer to a cooling rack. When cool, cut and enjoy. My favorite – those first slices off of a fresh baked loaf with just butter on them…it doesn’t get much better than that.
