Mention pumpkin and the first thing that comes to mind is Jack-O-Lanterns, but there are lots of of other good things to make from pumpkin. Here's how you can create some unique pumpkin goodness, just in time for Halloween!

The recipe for that yummy looking Creamy Pumpkin Cheesecake with Ginger-Pecan Crust comes from The Cake Book by Tish Boyle, as interpreted by Mary at Alpineberry. In a group blogging experiment, the same recipe was made by Peabody, Kate and by Ivonne, so check out all the versions.

It's Pumpkin Harvest Cookies from Anna of Cookie Madness.

In Laura Rebecca's Kitchen they're eating Pumpkin Spice Cake with Honey Cream Frosting.

From her Fat Free Vegan Kitchen, very inventive cook Susan gives us a healthy take on pumpkin pie. Susan uses a type of squash called cushaw, which she says is what is really in most canned pumpkin.

Wait until you see the Pumpkin Spice Muffins with Molasses Glaze from Tyler and Amanda from What We're Eating.

Carolyn from Field to Feast (in Zimbabwe) makes Pumpkin Fritters.

Angelika from The Flying Apple (in Vienna) makes Curried and Creamy Pumpkin Soup.

She uses butternut squash to make hers, but the recipe from Lisa of Champaign taste is called Colombo de Giraumon or Pumpkin Curry.

At Simply Recipes Elise gives a sure-fire recipe for Toasted Pumpkin Seeds.

Cookiecrumb reads Sean, who recommends Elise's recipe, and then she spices it up a bit more for her version of Five Spice Pumpkin Seeds.

Still another take on pumpkin seeds with the Spicy Sweet Pumpkin Seeds from Kitarra at Cooking Debauchery.
