Teaching others to can

Hi Friends,  I just got back from a circuit of classes in Oklahoma teaching people how to use a pressure cooker. My pressure cooker line (Fissler) isn't recommended for canning and while I have canned in an old pressure canner (years ago) what I teach is all hot water bath canning.  My classes are wanting recommendations for pressure canners to purchase so if you have one you really like please let me know what it is and why you like it....more

Canning for Christmas?

I am not canning for Christmas, though if I were really, really nice I'd be making my friends some raspberry jam. (Seeing as one of them is having surgery a week before Christmas I should be nice and do it shouldn't I?)Are you giving home-canned goods out to your friends and family this Christmas? Honey preserved clementines

I just found this fabulous recipe for honey-preserved clementines in the current issue of Fine Cooking.  They say that these things keep "in the fridge" for at least 3 months.  Any ideas how to actually can these so that they don't have to be refrigerated?  Being somewhat new to the canning world, I'm unsure whether there's some really good reason not to can them or why they need to be refrigerated.  Thoughts?http://www.finecooking.com/recipes/honey-preserved-clementines.aspx...more
