'Tis the season for winter squash, and butternut squash appears to be the favorite among foodies. Here are some amazing things you can make from the humble squash with the interesting shape.

I LOVE squash

Recent dining at my house has included baked squash stuffed with quinoa, spinach, and pumpkin seeds. I love the stuff. And my best pal calls me sometimes JUST to say this: We need more friends who will eat squash with us.

Recipe? Hmmmm....

There wasn't one. I'm one of THOSE people.

BUT.

I baked the squash whole first, because they're easier to cut that way. While the squash was baking, I toasted the pumpkin seeds in the hot oven until they were brown. Tip: Do not walk away and check email, because then, the seeds will be TOO brown. Stay right there.

I cooked the quinoa in some stock. When it was done, I mixed in the chopped spinach (I had frozen, it would be better with fresh), some olive oil, the pumpkin seeds, black pepper, salt, a little bit of curry powder and some cayenne. I like a little kick. This would be good with some parm or feta, but I'm on a vegan kick right now.

Then, I cut my cooked squash in half, scooped out the seeds, and filled it with the stuffing. That was it. The leftovers microwaved quite well, too.

It is their favorite veggie, they can finish a squash between the two of them. I usually either steam and puree or bake and puree.

Squash by any other name

It's fun seeing I'm not the only squash lover around. Roberta, no idea where the name comes from but it's worth mentioning that it's often called "pumpkin" in other countries. For example, I have a great sounding recipe I'm going to try from The Silver Spoon, a famous Italian cookbook, but I almost didn't spot it because it was listed under pumpkin. (I love butternut squash but am barely lukewarm about what Americans call pumpkin, go figure.)

I could not resist but squash the noun means:squash (n.) Look up squash at Dictionary.com
"gourd fruit," 1643, shortened borrowing from Algonquian (Narraganset) askutasquash, lit. "the green things that may be eaten raw," from askut "green, raw" + asquash "eaten," in which the -ash is a plural affix (cf. succotash).

I like the history here it adds to the reason to keep squash on the menu for Thanksgiving.

Baked winter vegetables my new cooking staple

Since going vegan one of my favorite dinner is to bake winter veggies tossed in olive oil, salt, pepper, garlic and cinnamon (the key ingredient.) While they're baking I whip up a mushroom gravy using nutritional yeast, soy flour, oil, tamari and rice milk, combined with sauteed portabella mushrooms.

I've baked combinations of: golden potatoes, acorn squash, butternut, yam, even brussels sprouts.

My non-veg*n S.O. and I love it!

Crockpot squash

I just did a crockpot squash today (in prep for tomorrow =)) I peeled and diced butternut squash added a little chicken stock, thyme, tabasco and nutmeg. It's so yummy, even my husband ("I only eat meat" guy) raved over it!!! Squash, the other orange veggie...
