Here's a news flash for any inexperienced or insecure cooks out there. Roasting vegetables is simple, and produces delicious results every time.
Check any food blog and you'll likely find talk of roasted vegetables. Root veggies, like the Spicy Sweet Potatoes in the photo are a natural. But there's much more to this roasted vegetable trend.

Oh, you have to try...
my Roasted Brussels Sprouts! My husband thinks that roasted brussels sprout crispies will be the next low-carb treat! :) and he used to hate brussels sprouts.
But you're right - I roast lots of veggies, it's almost as easy as the crock pot - roast a chicken/bake a casserole and roast veggies at the same time, and there's your dinner!
I look forward to trying some of these recipes!
