Oh, you have to try...
my Roasted Brussels Sprouts! My husband thinks that roasted brussels sprout crispies will be the next low-carb treat! :) and he used to hate brussels sprouts.
But you're right - I roast lots of veggies, it's almost as easy as the crock pot - roast a chicken/bake a casserole and roast veggies at the same time, and there's your dinner!
