If someone you know has to deal with allergies to foods like gluten, nuts, or dairy, this story will touch your heart, and maybe help you find recipes too.

Karina the Gluten Free Goddess has many loyal readers who love her fabulous gluten-free recipes, delivered with Karina's special flair. Recently though, when Karina was diagnosed with a multitide of other food allergies, one loyal reader took action to show just how much she wanted to help. Isaiah from Gluten-Free By The Bay posted the list of Karina's food allergies and announced Cooking For Karina, an event in which she challenged other bloggers to post a recipe for something yummy which Karina could enjoy.

Well, if you know anything about the food blog community, you know what happened. Recipes poured in and today Gluten-Free By The Bay posted Cooking for Krina: The Recipe Roundup. Yummy dishes included things like the lovely Carrot, Ginger and Cumin Salad from Trini Gourmet, Green Goddess Saute from Wheat Free, Meat Free, and Quinoa with Tomatoes and Zucchini from Sugar Delirium. There's even a video of Vegan Alfredo with Marinated Spagini from Freshtopia.

Let's face it - much of our lives is accented by the foods we eat and it's such a relief to not only find foods that don't make us sick, but to find foods that make us thrive. Thanks for sharing and helping others in the process.

Late in Life Food allergies

Several years ago I was diagnosed with cancer and as a result I developed a food allergy to dairy products (milk, cheese, butter, milk proteins, casien). Now my Drs all came to the agreement that I was probably always allergic, but that it was dormant( Many African-Americans are lactose intolerant--and yet we buy more milk than anybody on the planet). I discovered this allergy after going to the hospital several times with pneumonia-like symptoms (my allergy mimiced a lot of upper respitory dieases). Finaly after being in a coma for a couple of days, WE--my DRs and I figured out I am allergic to milk proteins. I know my case is severe and not the norm. Anyway, I have learned over the years to become my own food advocate and the places that I frequent are used to me and they cook accordingly. But it has been in the last several years that I was able to find reciepes for people like me. It is a pain in the ass but these days it is a lot better than it was in the mid 90's. So off I go to Cooking for Karina: The recipe round-up. I am a chef by trade ( I am formally trained)--so I am better than most at altering standard reciepes for my own palate.

Babz, what a scary experience, actually going into a coma from being allergic to foods. I'm glad you figured it out and can avoid those foods now. Hope you like the recipes!

We deal food allergies here

Food allergies are nothing to sneeze at. One of my boys has anaphylactic reactions to tree nuts, peanuts and coconut, and you would not believe how many products have these things in them. It's also tough to get other people to take it seriously. That is, until they see you administer an epi-pen; it's amazing how quickly they can turn around!

Carmen, so true. It seems like these kind of allergies can be even more serious in children. I've had a couple of kids as students who had peanut allergies, and I was always terrified that they would eat the wrong thing at school. Sounds like you are prepared.

Nut Flour - An alternative for traditional flour

To add to your excellent recipes I recommend you check out alternatives to traditional flour: here is a nut flour recipe for a three-nut torte. Gluten free of course!

Thanks Julie. I'm not much of a baker, but I have used almond meal with good results in baked goods and as a coating on fish and chicken. Of course, this is not for anyone with an allergy to nuts, but for gluten allergies it could be great!
