Not - Too - Sweet Peach Cobbler, single serve style!

Don't get me wrong, I love sugar...but sometimes I enjoy finding ways to balance our family's after dinner indulgence with a twist of not so sweet....  Tonight I have made a "Not - too Sweet" peach cobbler / dumpling recipe of my own.

 

In a small baking dish (serving size approximately 2), empty the contents of one (drained) can of peaches.  Pour just a few tablespoons of the syrup over the peaches, not much...Drizzle with 2 teaspoons of honey, if you wish you can add a little more.  (This is the only sugar added to the entire recipe...so you be the judge).  Add 1 teaspoon of Allspice and 1 1/2 teaspoon of cinnamon, mix together well.

In a small mixing bowl, combine half stick butter (softened) with 3/4 cup of Bisquick, cut the Bisquick into the butter until thoroughly combined.  Add two tablespoons of milk and 1 teaspoon of Vanilla Extract and mix together.  Spoon on top of your peach mixture.  Bake at 350 Degrees F for 35 minutes. 

I love the lightness of the biscuit topping, and the way the cinnamon and allspice are enhanced by the honey and vanilla...without an overpowering dose of sugar. 

Sweet, but not too much...
