One-Pan Pasta

I rarely cook because I’m blessed with a husband who makes delicious dinners and makes everything seem so easy in the kitchen. I usually prepare breakfast and lunch for our kiddos during the week, it’s pretty hard to mess up fries or chicken nuggets (I’m proud to say that my kids love salads and vegetables so it’s pretty easy to cook for them), and rest of the time I let my husband rule the kitchen and leave baking to me but once in a while I will cook something fast and simple.

I found this very easy recipe by Martha Stewart that is perfect when you have kids running around and don’t have time to stay in the kitchen or just in general want to throw something easy and fast together.

All you will need:


12 oz pasta. I used linguine but you can use regular spaghetti as well

12 oz cherry or grape tomatoes

1 onion, thinly sliced

4 cloves of garlic, thinly sliced

2 sprigs of basil and some for garnish

2 tablespoons extra virgin olive oil

salt, pepper, any other seasoning you might like

grated Parmesan cheese

4 1/2 cups of water

Combine pasta, tomatoes (cut them in halves or in quarters), sliced onion and garlic and basil in a pot and cover with water. Add some olive oil and your choice of seasonings. Boil till the pasta is al dente (9 mins) and most of the water has evaporated by mixing once in a while.

Serve with Parmesan and garnish with basil.
