One Pot Meat-free Meal

Have you ever seen this picture?
I've seen it on Pinterest and Facebook and wondered what it tasted like. So, I stopped by the store this afternoon after work and bought the ingredients. Here's what's in the pot...
16 ounces uncooked linguine
1 can (14.5 ounces) diced tomatoes with liquid ( I used an Italian basil & oregano flavor)
1 large white onion, cut in strips
4 thinly sliced garlic cloves
2 teaspoons dried oregano leaves
4 1/2 cups vegetable broth
2 tablespoons extra virgin olive oil
1 bunch chopped fresh basil shredded Parmesan cheese for garnish
You can add 1/4 teaspoon red pepper flakes, if you like a little heat.
Place pasta, tomatoes, onion, and garlic in a large stock pot. Pour in vegetable broth, sprinkle on the pepper flakes, basil, and oregano, and drizzle with the olive oil.
Cover the pot and bring to a boil. Reduce to a simmer and keep covered, cooking for about 10 minutes. Stir every 2 minutes. Cook until almost all liquid has evaporated. This leaves a nice creamy broth at the bottom of the pot.
Season to taste with salt and pepper. Stir the pasta to evenly distribute the liquid from the bottom of the pot as you serve. Serve with the shredded Parmesan. It serves about 4 or 5 people.
It was a hit with my son (who doesn't eat vegetables) and my husband. I poured myself a glass of wine and ate up. I liked the ease of the preparantion and it tasted really good. I think the red pepper flakes would have added some interest to the pot.
And here's the final product...
