Paleo Almond Joy Brownies.

Yields 16 brownies.

Ingredients:

Coconut Brownies. (Adapted from Comfy Belly.)

  • 1/2 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 5 large eggs
  • 3/4 cup honey
  • 1 teaspoon coconut extract or flavor (can sub almond or vanilla extract)
  • 1/3 cup + 1 tablespoon melted coconut oil
  • 2 tablespoons of lite coconut milk
  • 1/2 cup finely chopped unsweetened baking chocolate

Chocolate-Coconut Frosting. (Adapted from Paleo Spirit.)

  • 1 perfectly ripe avocado
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey
  • 1/2 teaspoon coconut extract or flavor (can sub almond or vanilla extract)
  • A pinch of salt

Almond Joy Topping.

  • 1/2 unsweetened coconut flakes
  • 1/4 cup sliced almonds
  • A pinch of salt

Method:

First, make the brownies. Preheat your oven to 350 degrees Fahrenheit. In a small bowl, mix together the coconut flour, cocoa powder, salt, and baking soda. In a larger bowl, whisk together the eggs, honey, coconut extract, 1/3 cup coconut oil, and coconut milk. Add the dry ingredients to the wet ingredients and mix well with a food processor, stand mixer, or immersion blender. Stir in the baking chocolate.

Pour 1 tablespoon of coconut oil into an 8×8 inch baking pan and use a paper towel or pastry brush to evenly distribute. Pour the batter into the prepared pan, and bake for 25-27 minutes, until a toothpick inserted into the center comes out clean.

Next, make the frosting. Add all of the ingredients to a food processor and pulse to combine. Continue to pulse until the mixture is smooth and fudgy, scraping down the sides as needed.

Meanwhile, in a hot, dry skillet, add the ingredients for the Almond Joy Topping. Toast until brown and fragrant, keeping a close eye on the skillet, as the coconut will burn quickly.

When the brownies have cooled completely, top them with the frosting and then sprinkle with toasted coconut and almonds. Slice and serve.
