Paleo Recipes: Spaghetti Squash Lasagne
I'm always on the search for comfort food Paleo recipes. I'm a Southern girl so comfort foods are the basis for most of my family meals. No doubt about it, the hardest thing for me to give up when trying to eat Paleo is pasta. It's a staple in my house and one of my go-to meals when I've had a busy day. But spaghetti squash is a great alternative and this is one of my all-time favorite Paleo recipes, Spaghetti Squash Lasagne by The Clean Dish.
If you haven't yet made the switch to "the healthier pasta," spaghetti squash, this is the perfect dish to try it. I make several different versions of Paleo recipe, adding whatever veggies and meats I have leftover in the fridge - sometimes, it's spinach, other days it's turkey sausage. My daughter is 100% Paleo and doesn't eat dairy, so I bought small casserole dishes when I need to modify a dish just for her. She adds either vegan cheese or yeast flakes to her lasagne.
And as Rose of The Clean Dish recommends, do not omit the nutmeg. It's actually a very common ingredient in many Italian dishes and trust me, you'll appreciate that subtle added seasoning. I serve this with my favorite side salad or arugula, toasted pine nuts, shaved parmesan and my honey/dijon vinaigrette.
