Patriotic Cupcakes


To make these tasty and tempting cupcakes I used a box of cake mix and some decorations, and since I don’t like store bought frosting, I prepared my own.  (See the recipe at the bottom.)

This is a cool project to do with the kids.  Let them be creative and do their own decorations.  You’d be surprise at how much imagination kids have.
I’ve baked several batches of these babies--I even baked one batch in a tri-color fashion.

To make a tri-color cupcake:  I separated the cake batter into three equal parts. Then I added food color to two of the parts; To one part I added red food coloring and to the other part, I added blue food coloring.  I didn’t color one of the batches on purpose (as I want to create a tri-color theme.)  I spooned into the cups, the red cake batter first, then the regular cake batter (with no color added,) and then the blue cake batter on top, and baked.  When you cut open the cupcake you will see the three colors.

1 box of cake mix (prepare according to instructions)
Cake decorations
Cupcake foils
Frosting (store-bought or homemade)

Prepare and bake the cupcakes according to instructions in the box.
Frost each cupcake and add decorations as you would like.

Buttercream Icing.
Buttercream Icing
½ cup of butter
½ cup of Crisco vegetable shortening
1 tsp vanilla extra
1 tsp almond extra
2-4 tbs milk,
1 box Confectioners sugar (10-x powdered)
With an electric mixer, cream the butter and the vegetable shortening.
Add Vanilla and almond extra
Gradually add the Confectioners sugar. When the sugar has been absorbed, add the milk spoon by spoon.
Beat until fluffy at medium speed.

Keep refrigerated if not in use.
