Peach basil fried rice with Thai-style tempeh

 

I had thought I would be in China by now.

After accepting a position in early May, with a start date intended by the end of the month, the delays that kept me stateside through the beginning of June came as a surprise. Surely, I thought without worry, I’ll be getting settled over there by July.

Then June came and went, and suddenly there were barbecues and sparklers, and it now appears that half the summer has been spent not on foreign travels, but on domestic ones.

Not that this is a terrible fate, of course. The extra month in Kansas was a huge blessing, and a stream of friend dates, weird odd jobs and local adventures throughout NJ/NY are nothing to complain about.

After years of yearning to move abroad, however, and plans to do so that keep falling through one after the other…I’m not sure how long I can keep living in limbo.
