Perfect Super Bowl Snack: BBQ Jalapeno Poppers

Our family loves jalapeño poppers. When I saw this recipe in the Pioneer Woman Cookbook I was excited to give them a try. They were a huge hit during Arizona Cardinal tailgating season.
Whether you are hosting or attending a Super Bowl Party they are the perfect snack. They are a bit time-consuming but are super easy and deliciously worth the effort. I suggest doing all the prep the day before and cooking the day of. Make plenty because they go fast!
**WARNING – Please wear gloves when working w/ jalapenos**
BBQ Jalapeno Poppers
16 Fresh Jalapeños
One 8 ounce package of cream cheese
½ cup of grated cheese
1 green onion
18 slices of bacon, cut in half
Bottled barbecue sauce (I use Sweet Baby Ray’s)
Rubber Gloves (I put my hands in Ziploc bags)
Preheat oven to 275. Cut jalapeños length wise and scrape out the seeds and membranes. In a bowl, combine cream cheese, grated cheese, and chopped onion. Stuff each jalapeño with the mixture. Wrap bacon slices around each half. Brush the surface with barbecue sauce. Secure the jalapeños with toothpicks. Bake in oven for 1 hour or until bacon is sizzling OR place in fridge and bake the next day OR freeze for future use. Either way, serve hot or at room temperature ~Enjoy~
