I actually never thought to use a radish in anything other than a salad. Washed, chopped. Lettuce, carrot, red pepper, cucumber, bit of salad dressing.

I did Google and have a bit of a crack up how sites would crow how versatile the radish is... and then give a list of salads it could go into. Poor radish. It can be grilled if that helps... but except for this delicious radish dip, I think the radish will be staying in the bowl for a while. Maybe some point it'll have its day!

To make radish dip you'll need:

1 package of softened cream cheese

2 cloves of peeled garlic or 1 tsp of minced garlic

8 washed radishes with the ‘tails’ and leaves/stems chopped off


So there’s a few ways of making this. The first, toss in the garlic and radishes together into a blender until it’s mush. Then add in the cream cheese until it’s well mixed. Chill before serving.

Or do as I did, since I’m still working on getting kitchen equipment into my bf’s place, and a blender just hasn’t been top of my list. I was, however, armed with a potato masher. So the radishes were peeled for a pure white dip look, chopped and steamed until they were soft enough, then mashed. 1 tsp of garlic was stirred in before being transferred to a bowl and mixed with cream cheese. Cover and chill.

This radish dip tastes delicious with crostinis (sold as ‘French toast’ here), or water crackers. They can be scooped on top of the crackers and displayed or served in bowls allowing guests to help themselves.
