Phyllo-wrapped breakfast burrito

Just what it sounds like. Talk about a lower-carb way to grab a quick breakfast! I used ~1 sheet of phyllo dough, spritzed very lightly with olive oil and folded in half. It's filled with scrambled eggs (1:3 ratio of yolk to whites) and herbed low-fat organic ricotta for a tasty protein punch. Just chop up herbs and stir into the cheese! Mini organic chicken-apple sausages are a nice touch if you aren't running out the door.
