Pops and Some Breeze and a Giveaway!

We've reached the dog days of summer, those last few lazy August days before the crispness of fall arrives along with the back-to-school routines, football games, and...

Wait!  I don't want to get ahead of myself.  It's STILL summer and even though the stores showcase school supplies and Halloween candy...

Wait!  There I go again.

Before I go any further, let's soak up the last drips of summer by making some cool treats.

Grab some popsicle molds (ours are from IKEA and Jelly Belly) and let's go.

I have had a couple of cartons of Almond Breeze Almondmilk Coconutmilk that Blue Diamond sent me and have been thinking of a fun way to feature their product here on the blog.  Even better, I've been pinning some recipes to my "Drinks and Frozen Treats" board waiting for the perfect opportunity.

My little guy and I came up with some berry ones of our own.  We call them "Berry Boppers."

1 & 1/2 cups berries (fresh or frozen)

1 tablespoon sugar

2 cups Almond Breeze Almondmilk Coconutmilk

1-2 tablespoons honey or agave nectar (optional)

Bring berries and sugar to a boil in a small saucepan.  Stir for about 2 minutes making sure the mixture doesn't burn.  Set aside to cool.

Pour the almond/coconutmilk into a food processor or blender and add the berry mixture plus the honey or agave nectar. Blend together and pour into molds.  Refrigerate any excess mixture (for up to two days) and save for the next round of popsicles. Freeze for at least three hours or preferably overnight.  Enjoy!
