Project Green Foot and an ugly veg

When I went to pick up our CSA basket, I saved 5 peppers, a few heads of lettuce, and celery from either the trash or compost. They were all on their last legs, so our local farmer just added it it all to my basket free of charge knowing I would juice the lettuce and celery! That really make my day.
While looking through our basket, I was excited to find dandelion leaves to juice. They are a natural source of calcium, potassium, phosphorus, zinc and iron and they provide vitamin A, B, C and D. They are an all around great leafy green.
I also came across a funny and odd looking vegetable. I had no idea what it was. So I ran to social media to find an answer- it was celery root. And boy oh boy, did it ever make a yummy soup matched with potatoes. It tasted and smelled just like celery. Imagine that, I love celery and have never encounter celery root before Tuesday. I think I am going to be looking for that veggie more often.

Wednesday: J.P went to Chipotle for lunch 7.85
Friday: We had pizza from our favorite pizza joint. We order out, but we had our reusable pizza boxes! 31.39
This week’s weigh in for composting was 15.8 lbs. I juiced a lot this week. Therefore, our compost bin was pretty full. I think before next week our bin will be filled to the top, so I will have to start a second bin. I am glad that our little bin fit so nicely in the freezer!
The only recycling we had this week was the stupid junk mail we have been receiving. Grrrr…
The trash this week comprised of: veggie/fruit stickers, plastic banana wrap, receipts, plastic from Kombucha bottles.
We did not travel very much at all this week. I went to pick up our CSA basket, and I took little E to “The little gym” for her weekly class. We were looking forward to participating in a few outdoor activities this week-end, but the weather did not permit. Besides that, we walked or stayed inside.
The total distance traveled was 151 km ( 94 mi). We did not need to fill our gas tank this week.
I think we had a pretty good week- we ordered pizza only once (we used our own reusable pizza boxes), we had minimal trash and recycling and we did not buy anything other than food. I would say it was a pretty successful week all in all.
After “falling off the waste wagon” for a few weeks, I feel as though we are now back on track. Sometimes you have to fall, and dust yourself off to realize what is important and what you are able to accomplish.
