Pulled Pork Taquitos

You may remember when I made this awesome Corona Pulled Pork recipe. Seriously, it was one of my favorites, and not just because I came up with the idea. I swear :)

Pork TaquitosBut I have to say, I wasn't sure how to handle the leftovers. I mean, yes I could eat pork tacos for the next 5 days, but really? Let's change it up, but not too much. So what is something easy to pack that would make a great lunch? Taquitos!

You may recognize some of the ingredients from before, like the quesa fresca and tortillas, and of course the left over pulled pork. However there is something new in the mix that was a one time purchase I thought I would never use again, jarred jalapeno slices. It was something I had bought for one of our raclette nights, and was somewhat irritated at the thought I would probably never use these again. Um, wrong. I have used them for last minute quesadillas, nachos, on sandwiches and now these taquitos! They are great because they are not overly spicy, but provide a great kick to any dish.
