Pumpkin Dip - A MUST TRY!

This pumpkin dip is just about the tastiest thing I've put in my mouth lately. The next time you need to whip something up in a jiffy for a work function or just for a snack, give this a try. It's truly remarkable. Serve it with gingersnaps or sliced apples.

INGREDIENTS
1 - 8 oz. package cream cheese, softened
2 cups confectioners sugar
1 - 15 oz. can canned pumpkin
1 tablespoon ground cinnamon
1 tablespoon pumpkin pie spice
1 teaspoon frozen orange juice concentrate

DIRECTIONS
In a medium bowl, blend cream cheese and confectioners' sugar until smooth. Gradually mix in canned pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice concentrate until smooth and well blended. Chill for several hours.

Tonight I decided to actually make a real dinner for me and my roommate. I made vegetable soup (from scratch) and while that was cooking I decided to give this pumpkin dip recipe a try.  I served us the dip with ginger snaps, and it was delicious! I do not like pumpkin flavored food and I ate 2 cookies!  Thank you for the recipe, we really enjoyed this treat.

If you like carrot cake, it's almost like carrot cake in a bowl.  My best friend is the one who introduced me to this, and she is the pickiest eater on Earth... no kidding, she eats salad with no dressing b/c she can't stand the flavor of any of them.  She LOVES this!  :-)

because of "A Month of Pumpkins" and I keep asking myself how in the world someone could eat this. heh. (Don't mind me, I'm sort of a picky eater.)

It's a fascinating idea, I just can't imagine eating it. But knowing TW, she will be making it soon and I will be forced to try it.
