QUICK, EASY AND HEALTHY THANKSGIVING RECIPES
With Thanksgiving just two days away, I am scurrying to find some quick, easy and healthy Thanksgiving recipes — specifically side dishes and desserts since I won’t be hosting this year. The holiday itself always brings out the glutton in people but with Christmas and New Year’s Eve still ahead, don’t go crazy gorging on traditional favorites.
Instead save some room for the other two upcoming holidays along with a host of fabolous holiday parties and opt to trying some of these healthy alternatives at your Thanksgiving feast this year.
A great dish to any meal in my opinion, is a delicious, hearty soup. And it just so happens that I by chance created this delicious concoction the other day based on items in my pantry. Here is the recipe for my Sweet Potato Coconut Soup, the smell alone of it cooking will entice even the pickiest eaters.
Sweet Potato Coconut Soup
Yields 5-7 servings
3 medium sized sweet potatoes, peeled and cubed
1 16 oz can coconut milk
1 knob of fresh ginger, diced
1 small onion, peeled and chopped
4 cups organic chicken stock (or 1 qt carton)
2 garlic cloves, peeled and minced
1 tablespoon EVOO
1 lime, juice and zest
Heat large soup pot and EVOO, once heated add onion and glaze for two to three minutes or until it starts to brown (*this step is totally optional, personally I like to glaze my onion)
Place all remaining ingredients in pot, pour chicken stock over and let the stock come to a boil. Once you establish a boil, lower to a simmer and cover pot — leave simmering for 25-30 minutes or until the potatoes are soft.
Once you’ve established the potatoes are soft, turn off stove and left cool off for a few minutes unless you have an immersion blender. If you have an immersion blender, skip the cooling step and go ahead with pureeing the soup.
If you do not have an immersion blender, use a ladle to scoop soup into high-powered blender of choice and puree until blended through.
Serve and enjoy immediately!
