Do you ever have one of those months where you look around and wonder what the heck happened? You look at your schedule and realize that you are out of the house three nights in a row? That is me this week and that is more socializing in a week than I usually do in a month. My schedule is a little insane and it's making me feel a little insane.
I had meal planning on the brain today anyway but now I'm looking at my schedule and freaking...just a little bit. I need to meal plan. I need quick, healthy meals. When I get home from the office I'm going to pul out some cookbooks and my recipe archives and look for those items that fit that bill. I don't know what they'll be yet but I can pretty much guarantee there's going to be a can chickpeas involved somehow. (Maybe Smashed Chickpeas?)
