Quinoa Stuffed Squash - Good for almost Every Body!

I know it's early to be thinking about Thanksgiving, but you have to forgive me. I was shopping and grumbling about the Christmas displays already being done up, and it's not Halloween, much less Thanksgiving!
Anyhow...my husband likes to come home for lunch, and I try to make him vegetarian lunches so he doesn't get that afternoon slump. I put together this quinoa stuffed squash and he thought I made a big fuss over him. It takes about 40 minutes, largely unattended, but I won't let on... It's so gorgeous and fall like that I couldn't help but think it is easy enough to serve at a fall potluck, or at Thanksgiving dinner. It's easily made vegetarian by switching out the chicken broth, and vegan by omitting the cheese (and switching the broth), and gfcf by leaving out the goat cheese crumbles.
