I first made this soup a couple a weeks ago when my mother-in-law was sick. Like I've mentioned before, she loves soup. She could eat it every day and I've started to adopt the same take on soup as well, I make it all the time. And I love it more and more with every healthy spoonful. When my mother-in-law was sick I was extra motivated to make an ultra healthy soup to take to her. I wanted it to be brothy so she wouldn't have to do too much chewing, since up until that point she'd only been eating/drinking broth for a day or so. I wanted it to provide as much nutrient punch as possible, so I made sure to add a variety of veggies and I included kale - the most nutrient dense green there is. Finally, I wanted her to have some protein to slurp down. Quinoa was obviously the best choice, since it's fiberful, very easily digestible, and is a complete protein. This soup requires a decent amount of chopping and prep-work but it is all worth it. The combination of vegetables are very complimentary and not too intense, while still fusing together to provide a delicious flavor.
