Ramen Noodle Salad? I Think So !

I have what I believe is the best pasta salad recipe ever. I actually got the original version of this recipe from my ex brother-in-law who is a fabulous cook. I don't know if it's actually ability or his mother just had really good recipes. He follows recipes to the letter but anything he fixes always turns out great so I guess following the tried and true is a great idea.

 His version is called Spaghetti Salad. The first time he ever made it, I didn't think it looked that appetizing honestly.  I thought spaghetti noodles should only be used in some version of spaghetti but one bite and I was hooked. I've made this recipe hundreds of times and it always gets raved about. I rarely use spaghetti noodles in my version though. I normally use rotini or trenne. I've also used many different add-ins. The one constant and what makes this salad is the dressing.

 I had a craving for this salad a few years ago and was out of pasta so I just happened to notice the Ramen noodles in the cabinet and bingo! First of all, this version is so quick because the noodles take no time at all to cook and I even cook mine in the microwave. The original version of this recipe calls for finely diced carrots, red and yellow peppers and green onions. I normally use broccoli, cauliflower, green onions, red or yellow peppers, cherry tomatoes and mushrooms chopped small but not really diced. There have also been many times where I'm out of most of those ingredients, such as yesterday and didn't want to have to go to the store on a lazy, rainy Sunday so I just used what I had which was cherry tomatoes and green onions. Here's the recipe for my Ramen Noodle version.


2 Packages Ramen Noodles broken into smaller pieces and cooked using package directions

1 Cup of halved Cherry Tomatoes

2 Chopped Green Onions

1/8 Cup Sunflower Seeds



1/2 Cup Vegetable Oil

1/2 Cup of White Vinegar

1/2 Cup Sugar

1/2 Tsp Salt

1/2 Tsp Black Pepper

1 Clove of Garlic minced or 1/4 Tsp of Garlic Powder

1/2 Tsp of Onion Powder

1 Tsp Dried Parsley Flakes or 1/8 Cup of Minced Fresh Parsley

1/2 Package of Ramen Noodle Seasoning for Each package of noodles used


Whisk all of the dressing Ingredients together or shake in a mason jar and pour over noodles and vegetables. Toss and Chill for at least one hour. ( This will be a lot of dressing so you may not need to use all of it. Coat to your liking Chill and add more if necessary)


I normally try to use the flavor of noodles to match the meat I'm serving. For instance, if I'm serving chicken, I use chicken flavored Ramen Noodles.  If you like shrimp, you can use the shrimp flavored noodles and add shrimp to the salad. You can also just leave out the seasoning packet altogether.
