Raspberry Cheesecake Cookies

In the past, these cookies were a major weakness of mine. The children's playground at the mall is right in front of the Subway Restaurant! The clear box sitting beside the cash register was always freshly stocked with Raspberry Cheesecake Cookies that called my name. I had one (or three) every time we went during the month of February. It's been years since I have eaten one though, seeing that my girls are now Tweens, but after finding this recipe that will change!

4 ounces soften original cream cheese
1/2 cup butter flavored Crisco ( shortening )
1/2 cup brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 pack (14 ounces) raspberry muffin mix
1/2 cup all-purpose flour
1 cup white chocolate chips
Mix Crisco, brown sugar, vanilla extract, and cream cheese together in a large bowl. Add muffin mix and all purpose flour gradually until blended well. Stir in white chocolate chips. Using a tablespoon measure spoon on to pan spaced one inch apart. (I always make mine bigger cause I don’t measure them. Remember to allow extra baking time.) Bake at 350*F for 8 to 10 minutes or until edge is slightly brown.
