Have you even seen my first Rasta Pasta recipe? This recipe has been my most searched recipe on the blog since I randomly posted this a few years back. 

I decided to do an updated version of this recipe since it is still heavily searched and since I have gotten the measurements down to a better count. The method has not changed at all. It is still an easy recipe for a very tasty dish. 
In my first attempt at making Rasta Pasta I included the chicken in the dish as a "one pot", this time I have presented it as an option to add the chicken (or you can even use shrimp) on the side. This makes it great for people who may not want to have chicken to just have the pasta. 
I also slightly baked/grilled  my peppers for a bit before adding to the dish so that it had that fresh, crisp feel instead of it cooking all the way down in the dish.
You do not need a lot for this recipe. Chicken, pasta, cheese, bell peppers, jerk seasoning, garlic, knorr parma rosa (target now carries this regularly) and green onions

Baked Jerk Chicken
You can choose to mix your chicken in as one pot or leave it on the side.

I also grilled my bell peppers for about 10 mins before adding them to the pot

And after a little mixing and cutting.. Voila.. Rasta Pasta and it was sooo yummy!

Now for the Recipe.

A few PRE cooking activities

  • Bake chicken before you start to cook pasta
  • Cut up bell peppers and prepare them so that it can be easily put in oven after chicken is done

Rasta Pasta

  • 3 (about a 1lb) Chicken Breasts
  • 2 cups Penne Pasta
  • 1 tblsp Olive Oil
  • 1 stalk Green Onion
  • 1 lrg clove Garlic
  • 1 & 1 Tsp Jerk seasoning (mild or hot)
  • 1 pack Knorr Parma Rosa
  • 2 cups Grated Cheese (mozarella or sharp cheddar)
  • Bell Peppers (red and green)
  • 1 1/2 - 2 cups Milk
Cooking Directions

Jerk Chicken
  1. Season chicken as you usually would.
  2. Add 1 tsp of jerk chicken.
  3. Let sit. (can sit over night)
  4. Heat oven to 350c
  5. Place breasts in greased baking dish and cover with foil
  6. Bake for 35 minutes
  7. Remove foil, through off any excess water and replace in oven to bake for another 25 minutes
  8. Remove, strip and set aside
  1. Boil Pasta as instructed on the box and strain (no more than 10 minutes)
  2. In a medium pot heat oil on medium heat.
  3. Add green onions and stir.
  4. Add rest of jerk seasoning and stir for about 2 mins ensuring that onions are coated
  5. Add milk and mix. Pay close attention that it does not burn
  6. At this time you can also place the bell peppers (coated in oilve oil, salt & Black pepper) in the oven
  7. Add half pack of Parma Rosa powder
  8. Add half of cheese and stir well
  9. Add rest of Parma Rosa and cheese and mix well making sure that all clumps are dissolved.
  10. Add half of pasta and stir.
  11. If you want to add your chicken to the dish you can add it in here.
  12. Add bell peppers
  13. Add remaining pasta
  14. Add a little more milk if all liquid has disappeared
  15. Take off heat and serve
