Recipe Baked Trout- Wednesday September 5th, 2012
Baked Trout- serves, approximately 5, 4 oz each
2 garlic cloves, crushed
1 tsp brown mustard
1/2 tsp paprika
1/2 tsp salt
1/2 tsp chipotle powder
1/2 tsp Italian herb mix, no salt added
1 tbsp olive oil
1/2 lemon, thinly sliced
2 fish fillets, de-scaled & cleaned, skin on. (I had 1.34 lbs/21.44 oz)
Mix 1st, 7 ingredients together, except for the lemon slices & fish. Evenly spread mixture on both sides of fish fillet. Place lemon slices on flesh side of trout fillet. Cook right away or marinate, covered in fridge for about an hour.
Cook skin side up, on upper rack of pre-heated oven, at 475 F. For approximately 15 minutes. Timing will depend of thickness of fish fillet.
The trout is great hot or cold, by itself, or with a salad or another side such as steamed brown rice.

*You can lower the fat & calories by omitting or reducing the olive oil.
