Frugal Kitchen: Recipes for Leftover Eggnog

Homemade eggnog has a habit of disappearing -- in a flash! -- but cartons of the store-bought grocery-store eggnog seem to hang around forever and ever, before finally getting dumped down the drain. No need to waste eggnog, however. Here are nine recipes to help use up leftover eggnog.

1/2 cup leftover eggnog

I just made eggnog icecream: equal parts eggnog to whipping cream, with a sprinkle of nutmeg. Freeze as directed in your ice cream maker.

When I was a corporate travel agent we used to do an eggnog and cookie open house for the entire building every Christmas. There was always a ton (!) of leftovers and the 2 girls I worked with were always on diets and refused to take any home. I made waffles and pancakes all the time - the only thing I changed in the regular recipe was leaving out any eggs it called for and a little less sugar. I also used the eggnog in French Toast once or twice and even froze it!

It's simple to make Eggnog Truffles with the left-over eggnog. Of course, like you, there's never very much left over. I posted recipes for both dark and white chocolate eggnog truffles on National eggnog day (December 24). How fun! Thanks for all the other links.

Thanks for the great leftover eggnog recipe ideas. I was just getting ready to toss some eggnog. Now I'm going to try the eggnog cheesecake and the eggnog rice pudding. Oh well, just a few more calories, but who's counting until after New Years.
