[Editor's Note: This blogger made a great food find on the road, and figured out how to recreate it at home. The result? A cheesy, smoky, fantastic vegan burrito that satisfies all kinds of cravings. It had to be done.

This crazy, ridiculous, awesome creation of Homegrown Smoker that I wrote about in my Portland / Vida Vegan Con #4: Opening Reception recap.

I recreated this:

(Homegrown Smoker's Macnocheeto – tortilla stuffed with MacNoCheese, TB Beans, soy curls, peppers and onions, bbq sauce and more...)

Let’s cut to the chase. Here’s the easy way to do it yourself: wrap up vegan mac and cheese, soy curls, beans, peppers, onions and BBQ sauce in a tortilla. That’s it.

Or you can do this:

JL’s Mac ‘N Rice ‘N Beans ‘N Soy Curl Burrito [click for the recipe at JL goes Vegan…]
