I don't think I've ever tasted a dish made with lentils that I didn't like, so when this recipe for Refried Lentils Tostadas from Everyday Southwest popped up in my feed reader, I bookmarked it immediately! Everyday Southwest is written by two sisters named Sandra and Donna, and Donna came up with this idea, which she says was the result of a desperation dinner one night when she was craving tostadas and had no beans in the pantry. I'd love this for a Meatless Monday dinner, and I bet your family would too!
