This is the season for food that's warm and comforting, and this Roasted Garlic and Potato Soup with Parmesan from Karen at FamilyStyleFood sounds to me like a perfect Meatless Monday dish for anyone who's a bit overloaded with rich holiday food. First the garlic roasts in the oven, making your house smell amazing, and then those roasted garlic cloves are simmered with the potatoes. The recipe says to cook the potatoes in stock or water, so use veggie stock and skip the Parmesan if you want to make this vegan.
