Rocket, Tomato & Corn Bulgur Salad

Less than 2 weeks till Christmas!
Have you bought your presents yet?
I am starting to panic now. There are so many things to organise and not enough time.:-)
But anyway, let's focus on today's recipe - a delicious healthy bulgur salad.
I'm a big fan of bulgur and pulses, in general. 
They are super filling, super easy to cook and when combined with the right ingredients it makes a wonderful dish.
So, just add some chopped veggies and this is it.
Here's what you need.


200g bulgur
600ml hot water
2 tomatoes, chopped
150g canned corn
100g rocket salad
a bunch of fresh parsley, chopped

For the dressing:

50ml olive oil
2tbsp lemon juice

In a bowl, place the bulgur.
Pour over the hot water and leave for about 10 minutes. 
Drain any excess water.
Add the salad ingredients and mix well.
In a separate bowl, combine all the ingredients for the dressing.
Pour over the salad and mix thoroughly.
Serve with a lemon slice on a side.


Tip: Make sure the bulgur is not hot when adding the salad ingredients unless you like your salad warm.:-)
