You will need:
1 can salmon
1 cup breadcrumbs
1/2 cup chopped onions
3 Tbsp. mayonnaise (I prefer Hellman's)
2 eggs, beaten
2 tsp. lemon juice
1 Tbsp. parsley
1/4 tsp. garlic salt
1-2 Tbsp. vegetable oil
- Drain salmon and mix in bowl with all other ingredients except vegetable oil. (You don't have to, but I do scrape some of the larger bones out of the salmon, however, they are all edible and very good for you).
- Make into patties.
- Put 2 Tbsp. oil in frying pan and cook on medium heat until brown on both sides are cooked through.
- Eat on a bun with all the trimmings like a burger, or eat them by themselves they're so good.
I made these for the first time and they were a huge hit. My husband, my girls, and myself, this hardly ever happens. Very easy, very healthy, this recipe is going to be cooked on a regular basis. Love finding a new recipe I can add. They do have salmon burger patties pre-made at HEB, I have not tried them but my mother says they are wonderful. Makes 8 servings.
