Save That Turkey Carcass and Your Leftover Turkey, and Turn It Into Turkey Soup!

In my family there's a long-standing joke about the turkey carcass. No one else wants it, but everyone is very aware of making sure it doesn't get thrown away because "You know Kalyn will want it." It's true! I think one of the best things about Thanksgiving is the delicious turkey soup you make later, from the leftover turkey carcass that would have been thrown away.
If you have a turkey carcass and want to make turkey soup, you *must* start by making homemade turkey stock. Delicious turkey stock is the difference between turkey soup that's merely okay and turkey soup that's mouthwateringly delicious. I was surprised I didn't find more bloggers weighing in on the subject, but here's my own take on how to make turkey stock and here's Michael Ruhlman's oven method.
Once you have that delicious turkey stock, you're ready to make soup. I found some classic types of turkey soups that will never go out of style, plus a few variations you may not have thought of. A few of these soups call for ground turkey, but you can always substitute finely chopped leftover turkey, especially if you're cooking it the day after Thanksgiving!
