Savory Pumpkin Recipes

In an attempt to assist me with this series of pumpkin posts, TW put a couple of savory pumpkin dishes on the menu for this week. I'm sure they'll be fine but as much as love pumpkin, I don't necessarily love pumpkin as a main dish or even as an appetizer.

I think I might have to make an exception for pumpkin samosas. I love samosas and these look really really good.

Some people are fans of the Afghan dish kadu buranee. Here's a recipe.

Hmm, I wonder how I'd feel about Mexican Pumpkin Lasagna? I might like spinach pumpkin linguini, maybe.

I found this pumpkin cheese soup with cranberries on Foodbuzz, the recipe is from Art Epicure and can be found here ( http://artepicure.blogspot.com/2008/09/pumpkin-tim... ).  It was delicious!  I did not have cheddar but used only the parmesean, and also added a generous amount of pumpkin pie spice.   You may gain a pound but it is highly recommended!

 My husband and I love to make this pasta with a pumpking pasta ( http://katelynsfood.blogspot.com/2008/09/pumpkin-p... ). It has lots of rosemary, sage & parmesan. Very yummy and comforting.

I LOVE cooking with pumpkin this time of year.  Pumpkins are great for baking and cooking because you can use them for many recipes at once.  Cube up half the pumpkin for stir-fry, puree the other half for baking, and then toast the seeds for a nutritious snack!

There are TONS of pumpkin soup recipes and I can't get excited about them because I don't eat soup. So I need bloggers who love soup to help me out. :-)

I always have frozen chicken stock in the freezer, so I took some out, thawed it and added a large chopped onion, a lot of chopped dill, and a few cut up carrots. When all was mushy-done I added cooked fresh pumpkin (I had cooked it by taking a small sugar pumpkin, washing, removing the handle, piercing a few times with a fork and microwaving til done. Let the pumpkin cool, cut it open , remove seeds and peel and voila -- easy cooked pumpkin. )

Anyway, I added that, salt and pepper to the stock and veggies and blended it all together with an immersion blender.

It is fast and fun.

For a variation, add less chicken stock and substitute fat free half and half for liquid. Add cooked diced potatoes for a chowdery soup. Serve (using as a tureen) in a fresh raw pumpkin that has had the seeds removed.
