Saw it. Pinned it. Did it. ~ Happy V-Day!

Happy Day of Love my fellow Fabu-lites! We are linking up with our favorite mess, Steph  and the lovely Katie to bring you today's SPD! Before I hand it over to your fav guest blogger, Amanda, I just wanted to share with you the Vday red blazer I am rocking at work today!

It's from Express and I splurged on it last year. I love the cut and the double flaps on one side. And, I really wish you all could reach through the screen and feel me {not in a creepy way}! Because this fabric is soooo soft and amazing!

How you are rocking red today? Have you gotten any flowers or oversized stuffed animals yet?? Let us know!

Take it away, Amanda!!!

Happy Valentine’s Day! I may be a completely anomaly with this ‘holiday’ but I just don’t care for it. I think it’s silly that you have to specify a day to tell someone you love them. My kind of love is having your new boyfriend (I’m talking a week) take you to the hospital on Valentine’s Day because you sprained your ankle playing volleyball. Yes, that was me last year.

Anyways, on to the purpose of this post! Saw It. Pinned It. Did It! Sorry I’ve been MIA for a couple weeks – a lot going on that I can’t reveal the deets on yet, but soon!

I have a major sweet tooth. Period. And it gets me in trouble, all the time. I came across this recipe on Pinterest yesterday that struck me as a simple, healthy way to curb my craving! There wasn’t a name for the cookie, so I’ve called it the Oatmeal Banana Cookie.

Oatmeal Banana Cookie

3 ripe mashed bananas
1/3 cup of applesauce
2 cup oats
¼ cup of almond milk
1 tsp vanilla
1 tsp cinnamon

Simply mix everything in a medium size bowl and scoop on to a cookie sheet. Bake at 350 degrees for 15-20 minutes.

Disregard my non-sparkling clean cookie sheet.

These little nuggets were super tasty but lacked some moistness (and I HATE that word). The original recipe called for ½ cup of raisins which likely would have done the trick but I searched the whole grocery store and simply could not find them – I know, I’m sure they were right in front of me.
Maybe add a little more almond milk? Or maybe some peanut butter? (Peanut butter is good with everything) Either way these treats are super simple, super cheap and pretty tasty!

Here is my original pin:

I hope you have a great rest of your week – we’re in the home stretch to the weekend!

Happy Pinning!
