Seafood. Summer. It's a Match!

I love a juicy grilled steak in the summer, but when the heat and humidity really crank up, what's more refreshing is seafood. Cooked anywhere but my kitchen! Since really fine neighborhood restaurants in San Diego are bursting out all over, one of my choices for a simple and delicious seafood dinner is a new local place in San Diego's North Park neighborhood: Sea Rocket Bistro.

My review of the restaurant appears today in the San Diego Union-Tribune's Night & Day section. But the home cook could get some great ideas from their simple preparations. Like the clean flavors of grilled whole sardines on a skewer. Or seared diver scallops on a bed of light-as-air mashed potatoes. Or seared sea bass with sauteed red Swiss chard. A peach empanada for dessert? Easy if you pick up some pre-made rounds of empanada dough at your local Hispanic market (in the freezer section). Sweet and juicy peaches are at every farmers market across the country right now. Chop, mix with a little sugar, a little butter and perhaps a bit of Grand Marnier or other fruity liqueur. Place a couple of tablespoons in one side of the dough, fold over the empty side and seal the seam tightly, then bake at 350 for about an hour. Serve with ice cream or frozen yogurt.

What a refreshing meal for a summer's evening!
