Truffle Cookies

My mom made these cookies all the time when I was a kid. Commonly, they are know as Chocolate Oatmeal Cookies or No Bake Cookies. She said the recipe card she got from her Aunt was labeled Shit Cookies. That's what she has always called them. In Tennessee, they are marketed under the name of Novaks. My children and I call them Truffles to be more appropriate. (The name idea came from Farmville. The pigs find truffles in the neighbor's pig pin. ) No matter what they are called, these cookies disappear before they are fully cooled.

Chocolate Oatmeal No Bake Cookies

1/2 C Butter
2 C Sugar
1/2 C  Can Milk
4 Tbsp Cocoa
1/2 C Peanut Butter
3 1/2 C Quick cooking Oats
2 tsp. Vanilla

Add the butter, sugar, milk, and cocoa to a large saucepan. Bring to a rolling boil. Boil for until the Candy Thermometer reads Soft boil or 3 minutes . Stir in the peanut butter. Once mixed thoroughly add the vanilla. Add oats to the pan; the mixture will become stiff and hard to mix. Make sure it's mixed well before dropping large tablespoons onto shiny side of aluminum foil. Let cool for about an hour or until set. 

*Makes about 2 dozen Cookies, depending on size of cookies. I usually get about 16 out of it.
