Skinny Cauliflower Fried Rice

Looking for a great side dish that is healthy and flavorful? We have been hearing a lot about the Paleo diet which is basically anything in it’s whole form and does not incorporate grains, so basically no carbs. Here is a little information on it, if you are interested in learning more. We are not on any strict diet but try to eat a limited carb intake in the evening, since you are the most sedentary. Our Skinny Cauliflower rice is the best option for a delicious side dish. Pair it with your favorite protein: chicken, steak, tofu or fish and enjoy a complete meal without any guilt. You can always add some hot sauce (our fave is Sriracha) to add a little kick. Try to limit the amount to reduce sodium intake. Enjoy~ T2B

 

Cauliflower Fried Rice
A low carb side dish that is delicious and healthy.

Ingredients
  1. 1 medium head (about 24 oz) cauliflower, rinsed
  2. 2 tbsp sesame oil
  3. 2 egg whites
  4. 1 large egg
  5. 1/2 small onion, diced fine
  6. 1/2 cup frozen peas and carrots
  7. 2 garlic cloves, minced
  8. 3 tbsp lite soy sauce, or more to taste
  9. 1/8 tsp salt (optional)
Instructions
  1. Remove the core and let the cauliflower dry completely.
  2. Coarsely chop into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower is small and has the texture of rice or couscous. Do not over process.
  3. Set aside in a microwave safe dish.
  4. Repeat with the remaining cauliflower.
  5. Heat in microwave for 2 minutes on high.
  6. Combine egg and egg whites in a small bowl and beat with a fork. Season with salt (optional)
  7. Spray nonstick spray in pan and add eggs to a heated pan, turn until scrambled
  8. Heat sesame oil in pan and saute the garlic and onions over medium heat.
  9. Raise the heat to medium-high.
  10. Add the cauliflower rice to the saute pan
  11. Cook approximately 5 to 6 minutes, stirring frequently, until the cauliflower is slightly crisp on the outside
  12. Add peas and carrots and saute for another 3 minutes.
  13. Mix in egg and soy sauce
