One of my favorite meals growing up was my Dads homemade Sloppy Joe’s. He made the best sauce… I’d load mine down with mustard and homemade slaw. We had them often because it was a quick and easy meal for a family of 5.
Now that I’ve become vegetarian, I want you to meet Sloppy Joe’s girlfriend, Jessie!
What you’ll need (serves 4-6):
1 cup dry lentils
1/2 green pepper, chopped
1/2 sweet onion, chopped
1 cup catsup
2 tbsp. worcestershire
dash of white vinegar
1 tsp. blue agave syrup**
Cook the beans as directed on the bag. This usually takes 20-30 minutes.
While cooking, sautee your green pepper and onion. Once cooked, add the catsup, worcestershire, and agave syrup. Stir, and let simmer for about 10 minutes.
Choose your favorite hamburger bun, and enjoy your messy, healthy supper!
I served mine on whole wheat buns with cabbage and homemade, baked sweet potato fries!

**This is a great natural sugar alternative. If you don’t have agave syrup, and if sugar doesn’t make you feel guilty, add 1 tsp. of sugar instead!
