Slow Cooker Beef Stroganoff
By jayhawkmommy on November 19, 2013
I love using a slow cooker to prepare meals. It is easy, quick, and, most of the time, tasty. We really depend on our slow cooker on busy days and on the Saturday nights when we go to Mass.
Recently, I've discovered that there are people who have never cooked from a slow cooker. Shocking, right? This next recipe, for Beef Stroganoff, is an easy one for those new to the crock pot (or an old hand).
The first thing I did was to season 1 lb of stew meat with some kosher salt and cracked black pepper. Then, I diced up a small onion and spread it over the beef. In a separate bowl, I stirred together a can of golden mushroom soup, 1 Tbsp Worcestershire sauce, and 1/4 cup water. I poured the mixture over the meat, put the lid on the slow cooker and allowed it to cook for 8 hours on low.
That's it. How easy is that?
Right before serving the stroganoff, I added 4 oz of cream cheese to the meat, stirring it in. Then, I prepared some whole wheat egg noodles to serve with the stroganoff.
This dish was amazing. I imagine we will have it again in the near future. My husband even suggested serving this stroganoff with mashed potatoes. We'll have to try it that way next time instead of using the typical noodles.
