One thing I love about sharing the weekly Meatless Monday recipe ideas for BlogHer is how it inspires me to try more meatless recipes for my own blog, and these Slow Cooker Sweet Potato and Black Bean Burritos were definitely one of my meatless success stories. I cooked the sweet potatoes, black beans, vegetable stock, lime juice, cumin, coriander, and garlic in the slow cooker until the sweet potatoes were done and then served it inside flour tortillas for an easy meatless burrito idea that's vegan if you skip the sour cream and cheese.
