Smoked Bleu Cheese Dressing

On our last trip to Thomasville, GA and Sweet Grass Dairy, my husband found some smoked blue cheese he had to try. So we bought it up and brought it home. I just opened it up last week and gave it a try. Now I am not fond of smoked cheese or things that taste smoked but really are not smoked so this was not my thing which was fine the more for my husband. However, Sunday when we were making some steaks and decided to make a salad to go with it blue cheese dressing was on the menu and he insisted I use the smoked blue. Now I have to tell you I was afraid, very afraid but what came about was not only delicious but I have eaten it for lunch every day since Sunday. My husband and his ideas strike again what can I say. Here’s the recipe.

1 cup crumbled smoked blue cheese
1 cup mayo
1/4 cup cream
1/4 cup half and half
red wine vinegar
salt and pepper

Add 1/2 cup of the blue cheese, the mayo, cream and half and half to your food processor and blend until smooth. Next add your salt and pepper and red wine vinegar. You will have to do this a little at a time tasting as you go. Some people are more sensitive to vinegar and salt and pepper than others so get it to your liking and give it one more blend. Once everything is combined add the other half of blue cheese crumbles and stir with a spoon to mix. You want to leave these crumbled in so the dressing is somewhat chunky unless you don’t like chunks then by all means blend until smooth. It’s all about what you like. Enjoy.
