Snack mix for young and young at heart

I’m home tonight from the restaurant for a rest, hoping to have a busy weekend.  I was sitting here wondering why I am so broke right now but it was time to renew my liquor license and pay the dram shop insurance and quarter taxes.  All things that are needed to stay open but not fun to shuck out the money to pay.  I had someone talk to me about closing and being the dietary manager at a local nursing home, but I hate to give up the fight for my dream.  They say it take three to five years to show profit, I am not in debt for my business just running day to day. 

Today my grandson came over before afternoon preschool and helped me make a snack for him to take to school.   He got the little bags out with footballs on them and laid them out for us to fill.  We made a snack mix that is one of those things you start munching on and can’t keep from going back for more. 

Crispix Cereal Snack Mix:

2 Cups Pecan half’s

2 Boxes Crispix Cereal

Mix together in a large bowl.

In a sauce pan mix:

2 cups brown sugar

 1 cup Karo syrup

2 sticks margarine

1 teaspoon vanilla

Cook until it comes to a boil, pour over the pecan, cereal mixture and mix well.  Grease two large cookie sheets and spread the mixture over the pan and bake for 1 hour at 200 degrees.  Let cool and break apart.  For fall color we added candy corn and pumpkins for a little extra snack for the kids.  My grandson had a blast making this and putting it in the bags to take to school.  Try some and enjoy.
