Editor’s note: I love risotto, and in those halcyon days before I had a kid, I would even make it for dinner sometimes. But until I teach my toddler to patiently stir, stir, stir, I’m going to prepare this Baked Risotto With Butternut Squash and Feta recipe that Pam from Sidewalk Shoes turned up. I was intrigued…Perfect for those times when you want a risotto, but you have other things to do besides stirring.
