Popsicles With a (Grown-Up) Twist: Pimm's Cup Popsicles, Cocktail Included
Editor’s note: BlogHer Food ’13 was a smashing success last weekend. The only thing that might have made it more fun would have been if we had some Pimmsicles on hand—Austin is hot, so hot; I could have used a refreshing popsicle like these. Michelle from The Tiffin Box has transformed the popular British summer cocktail into a grown-up treat. She drops fresh strawberries and kiwi into a popsicle mold and then tops it off with Pimm’s and ginger ale. Just freeze it overnight and try to wait for cocktail hour before unmolding the first one. --Jane
For those of you who have never heard of Pimm's, it’s a gin-based liqueur and is traditionally served at English garden parties (or pretty much anytime during the very short British summer). A Pimm's Cup is traditionally made with Pimm's and either ginger beer or lemonade, and served in large jugs filled with an assortment of fruit, including cucumbers… Following the success of my Mojito Popsicles last year, I was encouraged to try out this amazing drink in popsicle form.
