[Editor's Note: No matter what the season, I'm a fan of panzanella. The vegetable flavors shine through, accented by a tangy vinaigrette, and the croutons soak up the dressing until they're a perfect mix of crispy and soft. This seasonal version is perfect for a satisfying, yet healthy, main course or hearty side dish. --Genie]
I loved the bright colors of the blanched Brussels sprouts, roasted butternut squash and vinegar-soaked red onions in this recipe I adapted from Michael Chiarello. Fresh sage and thyme give this healthy, simple side a seasonal twist, making it taste just as good as it looks.
